Glutathion (GSH) is het belangrijkste antioxidant.
Het is het belangrijkste middel in het lichaam om zich te verdedigen tegen
bacterien, virussen en afwijkende eigen cellen. Het is een van de belangrijkste
stoffen van het immuunsysteem.
Het is ook het belangrijkste middel voor ontgiftiging van chemische stoffen en zware
metalen.
Veel mensen hebben tekort Glutathion. Het Glutathion niveau is meestal laag bij
CVS/ME.
Aanzienlijke verhoging van Glutathion kan worden bereikt met een supplement. Het
moet in liposomale vorm ingenomen worden omdat het anders in de darmen wordt
afgebroken voor het zijn doel bereikt. Er zijn veel Glutathion supplementen die
daardoor niet werken.
Het lichaam maakt zelf Glutathion aan. Maar soms niet genoeg, door een tekort van
andere, voor de aanmaak belangrijke stoffen.
Hulpstoffen voor de glutathionconjugatie zijn taurine, vitamine C,
vitaminen van het B-complex zoals vitamine B5, B6 B12 en foliumzuur, N-acetyl-cysteïne of NAC+ en Magnesium.
De basis voor Glutathion zijn sulfiden (zwavelverbindingen).
Die komen van nature veel voor in groenten zoals broccoli, koolsoorten,
spruitjes, asperges, knoflook en uien. Andere voedselbronnen zijn witloof,
avocado, cottage cheese, ei, zaden, noten en algen.
N-Acetyl-Cysteïne (NAC) is een precursor van Glutathion en kan ook
de hoeveelheid Glutathion wat verhogen.
Bewegen (sporten/ wandelen) helpt ook om het niveau te verhogen. Teveel sporten
verlaagt het niveau.
Het smaakt niet. Om het toch 'ongemerkt' in te kunnen nemen is het mogelijk om
het in een hap dikke tomatensoep te doen, liefst met wat grove stukjes, en
dit zonder te kauwen door te slikken of met groente of tomatensap.
Flavonoïden rode wijn en druivensap en cacao
Omdat flavonoïden vooral in de velletjes en
pitten van druiven zitten, heeft vooral rode wijn een gunstig effect. Bij het
maken ervan worden de schillen met het sap mee gefermenteerd, bij witte wijn
worden ze vooraf verwijderd. Sommige druivenrassen beschermen overigens beter
tegen hart- en vaatziekten dan andere, omdat ze een hogere concentratie aan
flavonoïden bevatten. Vooral Chileense cabernet sauvignon, petit syrah en pinot
noir scoren op dat vlak het best. Ook in gewoon druivensap zitten flavonoïden,
maar tien keer minder dan in rode wijn. Dat verschil wordt onder meer
veroorzaakt door de langdurige gisting van de druivenvellen. Overdrijf niet met
wijn: als je elke dag een kwart liter naar binnen giet, verhoogt je risico op
borstkanker met 25 procent. Dat komt
wellicht omdat wijn (en andere alcohol) het borstweefsel vatbaarder maakt voor
beschadigingen én omdat alcohol
kankerbevorderende hormonen in het bloed doet stijgen.
Onder de nieuwe onderzoeksdomeinen, lopende en toekomstige, behoort zeker de
gezondheid van de hersenen. Het is belangrijk dat de hersenen, net zoals het
hart overigens, een goede bloeddoorstroming krijgen. Ook het complexe web van de
immunitaire weerstand is een populair onderzoeksdomein. Zo blijkt uit recent
onderzoek, uitgevoerd bij gezonde vrijwilligers, dat de flavanolen aanwezig in
cacao, mogelijk de aangeboren immuniteit stimuleren en een rol spelen in de
opbouw van de verworven immuniteit. In een andere recent uitgevoerde studie door
onderzoekers uit Düsseldorf (Duitsland), blijkt dat het drinken van een
cacaodrank rijk aan flavanolen de weerstand van de huid ten aanzien van
blootstelling aan ultraviolette stralen verhoogt. Hetzelfde onderzoeksteam
publiceerde onlangs nog een andere bevinding: de microcirculatie zou door het
drinken van een flavanolenrijke drank verbeterd worden. Na één uur neemt de
bloeddoorstroming in de lederhuid met 70 % toe en de zuurstofverzadiging met 80
%
Rauwe cacao die is gemaakt van wilde criollo bonen die
niet zijn gefermenteerd kunnen zeer rijk zijn aan flavonoïden. Een stukje
van 10gr bevat minimaal >800 mg FC en het is dus genoeg om dagelijks een
stukje van 5 gram of 10 gram te eten.

Polyfenolen percentage in rauwe chocolade
De grootste chocoladeproducent Barry Callebaut gaat prat op een
gepatenteerd speciaal productieproces — Acticoa— dat hoge
polyfenolengehaltes garandeert. «Volgens onze eigen metingen zit
er in onze donkere Acticoa-chocolade tot 6.000 mg polyfenolen
per 100 g. Zonder toevoegingen!», zegt Herwig Bernaert van de
research & development-afdeling. Barry Callebaut produceert
vooral chocolade — en dus ook Acticoa — voor anderen, maar zal
in het najaar ook zelf één met hoge polyfenolengehaltes op de
markt brengen.
Côte d’Or Sensations Intense 70% Cacao is samen met Côte d’Or
Brut 86% Cacao de enige percentagechocolade die het aantal
polyfenolen expliciet vermeldt. «Een portie van 30 g (3 stukjes)
bevat 84 mg polyfenolen wat overeenkomt met 50% van de totale
dagelijks hoeveelheid met een antioxiderend effect.» Op de
Sensations Brut 86% Cacao wordt dat ‘94 mg polyfenolen’ en
‘55%’. Dat maakt respectievelijk 280 en 310 mg per 100 g. Dat is
weinig in vergelijking met de eerder aangehaalde chocolades en
ook hun aanbevolen hoeveelheid is wel heel laag: 170 mg per dag.
Zo’n 600 milligram als aanbevolen dagelijkse hoeveelheid is
volgens experten realistischer. «De chocolade is gemaakt volgens
het normale proces en recept. We zetten het polyfenolengehalte
er alleen maar op omdat het gezondheidsaspect de consument
interesseert. Het gaat er echter vooral om dat ie lekker is»,
reageert Stéphanie Poncelet, group brand manager voor Côte d'Or.
Een van de wetenschappelijke methodes die wordt gebruikt voor
het vergelijken van de hoeveelheid anti-oxidanten in
voedingsmiddelen is ORAC (Oxygen Radical Absorbance Capacity)
Cacoa beans contain 10,000 milligrams (10 grams) per
100 grams of flavonol antioxidants!

They found that the highest phenolic content was in Malaysian beans followed by
Sulawesian, Ghanian and Côte d’Ivore.
Cocoa beans undergo various stages of processing before turning
into raw cocoa (fermented and dried cocoa beans) and cocoa-based products.
Fermentation is considered as one of largest influences on flavonoid levels
in chocolates
Fermentation is one of the steps involved in the production of cocoa beans. This
step is crucial in determining the quality of cocoa aroma.
Almost 90% of polyphenols are lost from fresh cocao beans
during fermentation.
In practice, cocoa manufacturers blend the unfermented, partly
fermented and fully fermented beans, to obtain the desired flavour
characteristics
Raw cocoa beans contain over 300 chemically identifiable compounds. This makes
cocoa one of the most complex food substances on Earth.

Background
Chronic fatigue syndrome (CFS)
is a debilitating condition and associated with a reduced quality of
life. There are data suggesting neuro-endocrine axis involvement in
CFS including disturbance in hypothalamic-pituitary-adrenal axis,
growth hormone axis, opioidergic system and interactions with
5-Hydroxy Tryptamine (5-HT) system. Studies with selective
5-HT-releasing agents, using prolactin or cortisol responses to
stimulation, found evidence of enhanced serotonergic responses in
patients with CFS. Cocoa is known to increase neurotransmitters like
phenyl ethylamine, serotonin, and anandamide in the brain.
Objective
To study the effect of high
cocoa polyphenol rich chocolate in patients with Chronic Fatigue
Syndrome.
Design
Double blinded, randomised,
placebo controlled fashion using high cocoa polyphenol rich
chocolate in comparison to simulated iso-calorific chocolate dyed
brown as placebo.
Results
Ten patients were enrolled in
the study of which 5 patients completed both arms. The Chandler
Fatigue Scale score improved significantly after 8 weeks of the high
cocoa polyphenol rich chocolate phase (32.6 vs. 22.0 p value
0.012) and, interestingly, fell significantly when patients were
given simulated iso-calorific chocolate (25.3 vs. 28.6 p value
0.026). The residual function, as assessed by the London
Handicap scale, also improved significantly after the active phase
(0.485 vs. 0.628 p value 0.018). The mean weight before and after
the placebo arm were also unchanged (73.43 kg vs. 73.85 kg,
respectively p value 0.345). Anecdotally, two patients were
able to return back to work after having had their symptoms for a 2
year period and continued on high cocoa polyphenol rich chocolate.
Conclusion
High cocoa polyphenols rich chocolate 15 g three
times daily improved fatigue and function in patients with chronic
fatigue syndrome over a period of 8 weeks compared to simulated iso-calorific
chocolate. Whether hormonal modulation by this high cocoa
polyphenols rich chocolate also occurred needs clarification.

chocolate reduces symptoms of chronic fatigue syndrome

Chronic fatigue syndrome patients who ate small
amounts of specially formulated dark chocolate every day
showed significant reductions in fatigue in a placebo
controlled trial.
Dark chocolate has received a lot of attention in
recent years for its potential health benefits. Studies
have found it may help reduce the risk of heart disease,
cancer, and stroke. It has also been shown to have pain
killing properties, amongst other benefits. Now a new
study has found that a specially formulated dark
chocolate can reduce self-reported levels of fatigue in
chronic fatigue syndrome patients.
The study was carried out by a team of researchers at
Hull and East Yorkshire Hospitals NHS Trust in the UK,
headed by Professor Steve Atkin, a Consultant
Endocrinologist.
A group of chronic fatigue syndrome patients were
given 45g of specially formulated high polyphenol
chocolate every day for eight weeks. A break of two
weeks was followed by the volunteers being given a
placebo in place of the chocolate without their
knowledge. The results showed that the CFS patients
reported suffering significantly less fatigue whilst
eating the chocolate. They also reported that high
levels of fatigue returned when the chocolate was
switched for the placebo.
Professor Atkin said �No one has examined the effects
of chocolate on CFS before and so this is a very
exciting and interesting result for us." He also noted
that the participants did not suffer from any
significant weight gain whilst eating the chocolate.
Dark chocolate of the kind used in the study could
benefit CFS patients in two main ways. The first, and
most likely explanation for the relatively rapid
reduction in fatigue, has to do with neurotransmitters.
Chocolate is known to increase levels of important
neurotransmitters like serotonin and dopamine which
researchers believe may help CFS patients as they are
associated with regulating many important biological
processes such as mood and sleep, pleasure and pain.
These neurotransmitters and a number of related
chemicals have been shown to be low in CFS patients and
a number of other interventions aimed at increasing them
have also shown positive results. The perceived decrease
in fatigue experienced by the study participants could
be the result of improved mood and mental outlook, the
benefits of better sleep quality, or a combination of
these and other factors.
Other benefits of chocolate for CFS patients likely
derive from its high polyphenol content. The dark
chocolate used in this study contained 85% cocoa solids
and was rich in polyphenol flavonoids. These polyphenol
flavonoids are powerful antioxidant compounds that can
significantly reduce cell damage from excess free
radicals in the body.
This property of chocolate is important since
research shows that excessive free radical activity,
known as oxidative stress, is common in CFS patients.
The reason for the oxidative stress is not known for
sure but could result from infections, environmental
toxins, disturbed immune system function, or a
combination. An individuals ability to detoxify harmful
substances and respond to physiological stressors such
as these is also likely to play a role. Whatever the
cause, oxidative stress can result in a large range of
problems throughout the body. It can interfere with
energy production in the mitochondria of every cell, it
can cause the immune system to over-react producing
allergies and other problems, it can interfere with the
function of various enzyme systems, and in the long-term
it can increase the risk of degenerative diseases such
as heart disease, cancer, and Alzheimer's disease. The
polyphenol flavonoids in dark chocolate could therefore
act to counter these processes by virtue of their
antioxidant properties.
It's important to note that the chocolate used in
this study was a special formulation of dark chocolate
which was very high in cocoa, low in sugar, and did not
contain milk or milk products. It would probably not be
wise for CFS patients to rush out to the store to buy a
regular chocolate bar and think they are doing
themselves some good. Firstly, chocolate bars contain
significantly smaller amounts of the important
polyphenol flavonoids. Further, regular chocolate bars
generally contain vast quantities of sugar and milk
products. Sugar can be bad for a number of reasons,
including exacerbating hypoglycemia and encouraging the
growth of unfriendly organisms such as yeasts and
bacteria in the gut. CFS patients also tend to have
problems with milk products and anecdotal reports
suggest they tend to feel better when they are removed
from the diet.
In conclusion, this is an important study and further
research may shed more light on the exact mechanisms by
which chocolate reduces fatigue in chronic fatigue
syndrome patients. Unfortunately, despite the headlines
of "Chocolate helps CFS patients", this is not really a
green light to go out and eat copious amounts of your
favourite chocolate treats. The high cocoa chocolate
used in the study most likely tasted more sour than
sweet! |
